TASTING NOTES

Aroma: Green notes – eucalyptus, mint and vetiver – combine with yellow-orange notes of mirabelle plums, apricots and orange blossom, along with pepper, cardamom and liquorice and ending with saline and toasty notes.

Taste: The mouthfeel is elegant, refined, silky and luxuriously simple, while the finish is dominated by a deep salinity.

FOOD PAIRINGS

For a general approach of the Vintage 2013, wine’s intensity calls upon the work of the acids to reveal its character. Can be paired in a fantastic way with acid-rich fruits or plants such as citrus fruits, green tomatoes, sorrel or rhubarb.

ORIGIN

Épernay, Champagne, France. Dom Pérignon vintages are produced using the best grapes on the estate. Each one is a unique creation with a style and an identity which are unique to its vintage: it is down to the Chef de Cave to decide if the vintage will be declared. “If the fruit we have harvested doesn’t satisfy the Dom Pérignon Champagne criteria, there will not be a vintage that year.” explains Richard Geoffroy.
